Stuffed Squash
1 lb. Ground sirloin or ground round
1 cup uncooked Uncle Bens long grain converted rice
1-28 oz ounce can of tomato sauce (or two 15 oz cans)
2 teas garlic powder
1 teas salt
- teas pepper
Yellow squash-how many depends on size of squash, about 7 large. More will be needed if smaller.
Preheat oven to 350 degrees.
Wash squash. Cut off ends of squash. Cut squash in half length wise. Scrape out inside seeds with spoon.
Mix together in bowl hamburger, rice, half of the can of tomato sauce, garlic powder, salt and pepper.
Spray baking pan with cooking spray then pour remaining sauce in pan to cover bottom of pan (Can add water if not enough sauce to cover bottom of pan). Lay squash on top of sauce in pan. Put meat/rice mixture on top of squash. Cover pan with foil.
Cook for 1-1/2 to 2 hours. Poke squash with fork to see if tender after 1-1/2 hours.
*Healthier Version-Stick with ground sirloin and use Uncle Bens whole grain brown rice
